Ingredients

Sauté base

  • 80 g fresh baby squid

  • 30 g of poached onion

  • 125 g cooked Santa Pau beans

  • 2-3 tablespoons of demi-glace sauce

  • 10 g extra virgin olive oil (EVOO)

  • Salt to taste

Finish and presentation

  • EVOO (to taste)

  • Ground black pepper

  • Chopped chives

Preparation

1. Sautéed baby squid

Heat a large frying pan over medium-high heat with the olive oil.. When the temperature rises, add the fresh baby squid Clean and well drained. Sauté quickly to seal them and preserve their tender texture.

2. Combining with the beans
