Originally from Cádiz cuisine, the tortilla de camarones is one of the most iconic tapas from southern Spain. Picture an ultra-thin fritter, crispy at first bite, with a delicate golden colour and that unmistakable flavour of freshly caught seafood. At Paco Meralgo we prepare it following the traditional recipe, and today we want to share it with you so you can enjoy it at home too.
Ingredients
- 4 g of purple garlic
- 100 g of tempura flour
- 100 g of cooked prawn
- 225 ml of mineral water (very cold)
- 4 g of chopped parsley
- 3 g of salt
- Sunflower oil
Step-by-step preparation
- Chop the garlic in brunoise (into very small, uniform cubes).
- Finely chop the parsley.
- In a large bowl, mix thoroughly until lump-free the garlic, parsley, salt, tempura flour and very cold water. (All these ingredients together at once).
- Add the shrimp and finish mixing until fully combined.
- Heat a wide pan with plenty of sunflower oil.
- Fry the fritters over low-medium heat, in your desired size.
- Once fried, they should have a very light golden colour, while also being very crispy.
- Drain the oil thoroughly on absorbent paper before serving.
The secret lies in the very cold water and in keeping to a low-medium heat: only then will you achieve that crunchy texture that wins you over from the very first bite.
