Durante el hervor se añaden los lúpulos de amargor, sabor y aroma y especias u otros ingredientes si la receta los lleva. Después se enfría el mosto hasta los 21ºC y se mete en el fermentador junto a la levadura. Se tapa con un tapón y una trampa de aire que libere el CO2 que crea la levadura y se deja en un sitio tranquilo y oscuro durante 14 días. Por último, se embotella y se deja reposar 14 días más… y ya está lista para tomar.

Cuando le planteo si existen riesgos de intoxicación si la pifias en algún paso, Navarro insiste en que lo peor que puede pasar es que las bacterias («a las que también les encantan los azúcares«) estropeen el mosto y «la cerveza tenga un sabor raro u horrible». «Aunque la tomaras no pasaría nada». Respecto a posibles daños en el bolsillo, tampoco parece que la cerveza casera pueda causar grandes destrozos, porque el litro sale por unos dos euros. Eso sumado a lo que te pueda costar el disfraz de monje de abadía belga, que a mí se me antoja imprescindible para meterme en estos menesteres.
