La “brandada” de bacalao es un plato tradicional francés que, sin embargo, es en la ciudad de Nimes donde goza de más prestigio. Su base es el bacalao, tratado y emulsionado con algunos, pocos, productos hasta conseguir que quede como una crema espesa, que se come, en principio, caliente. Hay que desmenuzar en primer lugar el bacalao, para trabajarlo después con aceite. La operación, en pura ortodoxia tiene que ser manual, aun que con el paso de los años y la adopción de robots y similares dicha ortodoxia haya hecho mutis por el foro. También ha variado su composición y elaboración, hasta el punto de que cada uno se las apaña como mejor le parece. La auténtica “brandada”, que se considera la de Nimes, aunque toda la Provenza francesa la elabore, se compone únicamente de ba calao desalado y deshilachado, aceite de oliva y un poco de leche o crema de leche; algunos optan por incorporarle un poco de ajo e incluso fruta. En España suele prepararse con fórmulas más o menos afines a la original, tendiendo generalmente a simplificar el conjunto. Porque una auténtica “brandada” exige tiempo, y
darle a la muñeca más de lo que algunos están dispuestos. Está pero que muy mal visto incorporarle patata, por mucho que su anexión abarate costos, facilite la tarea y persiga el objetivo de con seguir la textura que le es característica con menos tiempo.
La “brandada” de L’Olivé aporta algunas novedades: la de la incorporación de algunas hortalizas, por ejemplo. Sirve para verano y para invierno, aunque dado su alto valor calórico es más apropiada para esta última época del año.»

INGREDIENTES (Para 4 personas)
• 800g de bacalao de buena
calidad
• 400g de aceite
• 250 g de nata líquida
• 6 dientes de ajo
• 1 hoja de laurel
• 1 rama de apio
• 1 trozo de puerro
• 1 trozo de zanahoria

En una cazuela con agua, se pone el laurel, el apio, el puerro y la zanahoria y se deja que rompa a hervir. Seguidamente se añade el bacalao en trozos grandes y se deja hervir nuevamente durante un minuto. Se saca del agua y se desmiga.
En otra cazuela aparte se pone un poco de aceite de oliva con los dientes de ajo bien picados.

Cuando esté dorado se añade el bacalao y se rehoga ligeramente.
Se deja reposar un poco para que pierda el calor. Aparte se hará le
vantar el hervor a la nata y al aceite para que se le vaya el gusto
de aceite crudo.

También se deja que repose un poco para que pierda el calor. Se mezclan la nata y el aceite al bacalao poco a poco, y se monta con un turmix, como si se tratara de una mahonesa. Se rectifica el sazonamiento y se añade nuez moscada.

    2. Второй ярус — соединение вертикальных рам с нижним ярусом, фиксация их диагональными/горизонтальными стяжками (используются уровень и отвес). Для будущей укладки настилов выставляются горизонтальные ребра ригелей. С первого по завершающий (наивысший) ярус диагональные стяжки необходимо устанавливать в шахматном порядке, т.е. их местоположение не должно быть одинаково с соседними секциями ярусов по вертикали;
    3. Установка лестничных конструкций, расположенных под углом (рабочие могут подниматься и по вертикальным лестницам, встроенным в рамы, но это не удобно и затрудняет ход работ). Наклонные лестницы выставляются по мере подъема ярусов;
    4. Обязательное крепление возводимой конструкции лесов к зданию с использованием крюков с втулками, анкерами-пробками, надежно соединяющими рамы лесов со стеной (проверить!). Крепление лесов со стеной выполнить в шахматном порядке, шаг — 4 м;

Помехи в виде пристроек, значительная высота объекта, архитектурные элементы слабой прочности, потребность в окружении лесами всего периметра здания, одновременное ведение коммуникационных и ландшафтных работ (сжатые сроки) — все это задачи для подвесных лесов. Они применяются при отделочно-реставрационных работах.
    Выступающие наружу элементы подвесных лесов надежно удерживают консоли (материал — швеллер №10), закрепленные в распорку между перекрытиями, их соединяют между собой поперечины и связи на хомутах. Другими словами, за исключением опорных консолей, подвесные леса в остальном являются вариацией хомутовых строительных лесов (1,5″ поперечины и связи, 2″ стойки, 2,5 мм стенка стальных труб).
    Каждый новый ярус соединен с консолями на совпадающим с ним этаже здания и с нижним ярусом, вертикальные стойки обязательно крепить анкерами к стенам (шаг 4 м).
