Els refrescarem en aigua i gel i, a posteriori, una vegada escorreguts, els tallarem en trossos. Mentrestant, pelarem les carxofes conservant part de la tija i les envasarem al buit amb oli d&#8217;oliva verge extra i sal, per a despr\u00e9s cuinar-les al forn (precalfat pr\u00e8viament) a 90 \u00b0C durant 45 minuts.<\/li>\n<li>Una vegada fora del forn, les deixarem reposar abans de tallar-les en quarts. Mentrestant, escalfarem una paella amb oli d&#8217;Orujo i assaonarem els lletons amb pebre, els enfarinarem i els marcarem per tots dos costats a la paella juntament amb les carxofes i les cues de gamba (pr\u00e8viament rentades, pelades i assaonades).<\/li>\n<li>Una vegada saltat tot, agregarem un toc de Porto i reduirem la mescla abans d&#8217;incorporar la salsa demi-glace i setinar els ingredients.
