Pelem amb cura les carxofes per fora i per dins, mantenint un cor mel\u00f3s. Depenent de la temporada, tindran m\u00e9s pell interior i les hem de pelar tamb\u00e9. La idea \u00e9s un cor de carxofa que mantingui l&#8217;estructura i sigui el m\u00e9s mel\u00f3s possible.<br \/>\n2. Apilem les carxofes en aigua amb \u00e0cid asc\u00f2rbic per evitar l&#8217;oxidaci\u00f3 i que no s&#8217;enfosqueixin.<br \/>\n3. Disposem les carxofes en una safata gastronorm, en bateria, una per una, condimentant-les amb sal i pebre negre m\u00f2lt.<br \/>\n4. Cobrim les carxofes amb tres quarts d&#8217;oli d&#8217;oliva verge i un quart d&#8217;aigua mineral. D&#8217;aquesta manera, baixem lleugerament la sensaci\u00f3 de greix de l&#8217;oli i obtenim un producte m\u00e9s lleuger.<br \/>\n5. Cobrim la safata amb paper d&#8217;alumini perqu\u00e8 quedi ben tancada i no s&#8217;escapi vapor quan les coem al forn.<br \/>\n6.
