Orígen de la Fideuá

Son muchos los que en los últimos años se han apuntado al carro de la Fideuá, y la prefieren a la paella. Lo cierto es que es un plato que se ha popularizado mucho de un tiempo a esta parte, ganando terreno al que desde siempre está considerado el plato Mediterráneo por excelencia. Pero, ¿Sabes cuál es el origen de la Fideuá? Vamos a tratar de explicarlo.

Como muchos otros platos, el invento de la fideuá es atribuido a un “accidente”, o en este caso, más bien a una anécdota picaresca protagonizada por dos marineros valencianos (de Gandía concretamente) sobre el año 1930. El cocinero del barco, conocido como «Gabrielo», sabiendo de la devoción del patrón del barco por el arroz a banda que cocinaba habitualmente, decidió preparar un día la misma receta pero sustituyendo el arroz por fideos, para intentar así que “Zábalo” no acaparara tanta cantidad de comida y esta llegase al resto de marineros.

Al final, lejos de su propósito, lo que consiguió el cocinero fue popularizar el inventó, cuya fama fue extendiéndose por los restaurantes de Gandía y los alrededores, y convirtíendose con el paso de los años en un plato imprescindible de la costa mediterránea, y de cualquier restaurante marinero que se precie, rivalizando con la popular paella.

Al igual que esta, puede prepararse de diferentes maneras, aunque la base son los fideos gordos (los que son huecos por dentro), el pescado (se puede poner pescado de roca, rape, sepia, calamar…) y el marisco (galeras, gambas, cigalas…). Se prepara en el recipiente que da nombre al popular plato de arroz, la sarten ancha y plana de metal, aunque hay algunas recetas que se preparan en las tradicionales cazuelas de barro.

Un plato que ahora en verano alcanza su momento de más popularidad, y que, como representante de la Dieta mediterránea, contiene una gran cantidad de propiedades beneficiosas para nuestro organismo gracias los ingredientes con los que se prepara.
